Explained <br />the alleged complaint to the manager. Manager stated they (her and the cook) did <br />not receive a phone call, but saw the review online on Yelp. None of the <br />employees were sick. Manager stated they do not sell cold boba noodles but do <br />sell cold soba noodles. Soba noodles are purchased in dry form (similar to dry <br />spaghetti pasta) and are shelf stable when raw. They are only prepared when an <br />order comes in. How prepared is: they are boiled for 8 minutes at 212 F and <br />cooled with cold running water from prep sink — 70 F for about 30 seconds then <br />drained. After they are drained they are immediately placed in square serving dish <br />over ice and served immediately to customer. The dipping sauce is purchased <br />ready to serve in a 1800 mL carton (similar to milk cartons) and stored in 41 F. <br />Verified expiration date and storage temperature for dipping sauce to be June 8, <br />2022 and 41 F. Ice for the noodles is taken from the ice machine. Verified food <br />safety training certification: food manager and food handler cards are available <br />and current. Verified the walk-in cooler temperature at 41 F. Hand washing sinks <br />in kitchen and restrooms verified to be fully equipped with water at 108 F, hand <br />soap and paper towels. Restrooms are available and operational. Chlorine <br />sanitizing solution was 100 ppm and checked. Dishwasher was verified to be <br />sanitizing at 50 ppm.
