Met with Fredy Canales (Manager at MURO <br />Jack in the Box). I informed the manager of the alleged complaint above. Fredy <br />reported that he was unaware of the complaint and allowed that I inspect the <br />facility. Fredy described the facility's food processes and showed me all storage <br />areas. The restaurant's food ingredients include sliced tomatoes, lettuces, onions, <br />cheese, mayonnaise, mustard, ketchup, butter, chicken and beef patties, and <br />buns. All patty's are preformed and stored frozen in the walk in freezer. Another <br />supply of patties are stored in a McCall 2 - door freezer beside the griddle until <br />cooked. The condiments, cheese, and vegetables are stored in the prep cooler <br />beside the hot holding units. The patties are stored in the hot holding units after <br />they are cooked. The buns are stored in the dry storage. No issues were identified <br />in food cold storage, dry storage, preparation, hot holding, and food wrapping <br />areas. None of the employees were observed to be sneezing, coughing, or have a <br />runny nose. All employees were wearing face masks. Fredy stated that no <br />employees are currently ill, nor have been ill in the past few days. <br />Inspection Report was emailed to manager at: canalesfredy69@gmail.com <br />To minimize person-to-person contact, EHD is choosing to write the name of <br />person receiving the official inspection report instead obtaining a signature <br />Complaint Status: <br />5105.rpt Page 1 of 1
