Per Angelica & Stephanie (Managers), BAKER <br />they are unaware of the complaint. French fries and ground beef patties are <br />frozen and stored inside the walk-in freezer. Bags of french fries are moved to a <br />smaller freezer near the fryer before being cooked. Ground beef patties are <br />moved to a small freezer by the grill. Both walk-in freezer and small freezers were <br />0 F. Double cheese burgers are made with small buns, two small ground beef <br />patties, one piece of cheese, ketchup, mustard, onions and pickles. Buns are kept <br />at room temp in plastic bags. No outdated buns observed. Ground beef patties at <br />temp of 165 in the hot hold. Onions are received whole and are cut in an onion <br />slicer that is cleaned and sanitized daily. Onionsare cleaned inside the three <br />compartment sink after it has been cleaned and sanitized. Quaternary sanitizer <br />available and at 300 ppm. Onions and pickles stored in walk-in cooler at 38 F. <br />Pickles are received pre-cut.Cheese is stored in the walk-in cooler and then <br />moved to the sandwich prep line. Walk-in cooler temperature at 38 F. Cheese on <br />the prep line was at 46 F. Hand sink temperature at 122 F. Hand washing station <br />complete. Unable to verify alleged complaint. <br />Discussed report with Angelica (Manager). Re-inspection in two weeks.
