COMPLAINANT ALLEGES AROUND 4:00 PM BOTH HER SON <br />AND HUSBAND BECAME ILL WITH DIARRHEA AND VOMITING. COMPLAINANT CALLED FACILITY AND MANAGER <br />DISMISSED THE COMPLAINANTS CONCERNS STATING THAT IT TAKES AT LEAST 8 HOURS TO EXPERIENCE THE <br />SYMPTOMS OF FOOD POISONING. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#8 Use of Time as a Public Health Control <br />OBSERVATIONS: Cheese at the prep line was observed at 46 F. Time is being used at the sandwich prep line as a public <br />health control. Pickles, lettuce, sliced onions, sliced tomatoes and cheese were the items in the prep line. Each item had a <br />sticker with a time of 4 pm. Time items were observed was at 10:45 am, more than four hours. If time only is used as the <br />public health control for a working supply of potentially hazardous food before cooking or for ready-to-eat potentially <br />hazardous food that is displayed or held for service for immediate consumption, the food shall be marked or otherwise <br />identified to indicate the time that is four hours past the point in time when the food is removed from temperature control. <br />Correct today. <br />CAL CODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION -- TEMP ° F COMMENTS <br />No Temperature Data Collected <br />COMMENTS AND OBSERVATIONS <br />On site to conduct complaint investigation. Per Angelica & Stephanie (Managers), they are unaware of the complaint. French <br />fries and ground beef patties are frozen and stored inside the walk-in freezer. Bags of french fries are moved to a smaller <br />freezer near the fryer before being cooked. Ground beef patties are moved to a small freezer by the grill. Both walk-in <br />freezer and small freezers were 0 F. Double cheese burgers are made with small buns, two small ground beef patties, one <br />piece of cheese, ketchup, mustard, onions and pickles. Buns are kept at room temp in plastic bags. No outdated buns <br />observed. Ground beef patties at temp of 165 in the hot hold. Onions are received whole and are cut in an onion slicer that is <br />cleaned and sanitized daily. Onionsare cleaned inside the three compartment sink after it has been cleaned and sanitized. <br />Quaternary sanitizer available and at 300 ppm. Onions and pickles stored in walk-in cooler at 38 F.
