Environmental Health Department <br />Facility Name and Address: LA SUPERIOR, 3310 E MAIN ST, STOCKTON 95205 <br />Food Program Official Inspection Report <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: A food manager’s certificate was not available during the inspection. Provide a copy of the food <br />manager's certificate to cmuro@sjgov.org within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: Hot water was not available in the left-hand sinks located in the women's restroom. Adjust hot water <br />heater to maintain 100 - 108 F for the hand wash sink. Correct today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed flies in the service areas. Implement pest control to reduce/remove flies from food prep and <br />service areas. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed open food items in the bakery and meat walk-in coolers. Maintain food items covered with lids <br />or plastic wrap to protect from contamination. Correct today. <br />--------------------------------- <br />Observed two open bins with uncooked rice and uncooked beans. The lid to the beans bin had fallen in and was not taken <br />out. The rice bin was missing a lid and was observed with a scoop lacking a handle inside rice. Remove lid and scoop. <br />Clean and sanitize. Store rice scoop in a cleanable container and provide one for beans. Discontinue this practice to protect <br />food from contamination. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The cooling fan covers inside the meat walk-in cooler had dust accumulation. Maintain fan covers clean <br />to protect stored food items from contamination from fallen debris. Correct within seven days. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
