Adjust hot water <br />heater to maintain 100 - 108 F for the hand wash sink. Implement pest control to reduce/remove flies from food prep and <br />service areas. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed open food items in the bakery and meat walk-in coolers. Maintain food items covered with lids <br />or plastic wrap to protect from contamination. Correct today. <br />--------------------------------- <br />Observed two open bins with uncooked rice and uncooked beans. The lid to the beans bin had fallen in and was not taken <br />out. The rice bin was missing a lid and was observed with a scoop lacking a handle inside rice. Remove lid and scoop. <br />Clean and sanitize. Store rice scoop in a cleanable container and provide one for beans. Discontinue this practice to protect <br />food from contamination.
