Repair/replace <br />paper towel dispenser so that it is in good working order. Observed cardboard on the floor in the <br />hood area. Observed foil on shelves in the hood area. Remove cardboard and foil as they are not cleanable surfaces to <br />protect food prep and storage areas from contamination.
