<br />OBSERVATIONS: Observed an unsanitary wiping cloth on the drain board to the 3-compartment sink and another on the
<br />prep sink drain board. Keep wiping cloths inside a bucket containing sanitizing solution when not in use during operation.
<br />When they become soiled, place in laundry bag. Correct today.

<br />OBSERVATIONS: Observed food debris and beverage wrappings inside the walk-in cooler floor. Several surfaces on the
<br />floors in the back were observed with build-up. Detail clean within three days and maintain clean daily.
