All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR” pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#7 Hot and Cold Holding Temperatures Major <br />OBSERVATIONS: The walk-in cooler was 61 F, the hot dog from the walk-in cooler that was temped was 60 F. Per <br />manager the cooler was found to not be working this morning, the unit was being serviced during the inspection. Let <br />manager know that the perishable food in walk-in cooler can not be sold as it has been above 41 F for an unknown period of <br />time. Corrected on site, the walk-in cooler display doors were taped off and the food inside will be discarded at the end of <br />the day. Let manager know to have employees not check out any items from the walk-in cooler at the register and that if <br />they want to sell new perishable food products while the unit is out of service they can bring in a temporary refrigeration unit <br />that provides 41 F or below. Do not store potentially hazardous or perishable food items inside walk-in cooler until it is 41 F <br />or below. <br />The open reach-in display at the market was 60 F, per manager the unit was not working properly. Observed some salads <br />with perishable keep refrigerated on package for sale in unit. Maintain potentially hazardous food items at 41 F or below at <br />all times. Corrected on site, the salads were removed from sale and will be discarded later. Do not store perishable food <br />items at this unit until it is 41 F or below. <br />CALCODE DESCRIPTION Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F.
