Non-compliance may warrant immediate closure of <br />the food facility. <br /> #6 Handwashing Facilities Supplied and Accessible MAJOR <br />OBSERVATIONS: Paper towels at the kitchen hand sink and restroom hand sink were not currently stocked inside the <br />single-use paper towel dispenser. Maintain the dispenser stocked at all times and in good repair to ensure proper hand <br />washing. <br />Corrected on site. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953, 113953.1, 114067(f)) <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The bacon-wrapped cheese-filled jalapeños were observed at 110 F inside the Henny Penny hot hold. <br />The Henny Penny hot hold unit temperature was also 110 F. Jalapeños had just been placed two hours prior, they were <br />heated and the hot hold unit was turned up. Corrected on-site. <br />---------- <br />The walk-in cooler temperature was observed at 46 F. Adjust unit to maintain 41 F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. Remove cardboard as they are not cleanable <br />surfaces to protect food prep and storage areas from contamination.
