Environmental Health Department <br />Facility Name and Address: PAMPANGAS BAKERY RESTAURANT, 1619 E HAMMER LN, STOCKTON 95210 <br />Food Program Official Inspection Report <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Per owner the items in the display warmer, the cut hardboiled eggs in the case near the steam table, and <br />the packaged sticky rice at the front counter have a 4 hour max hold time from 8 AM - 12 PM, there were no records or <br />documentation provided during the inspection. Provide records/documentation when time is used as the public health <br />control and discard any remaining food after 4 hour max hold time. Correct today. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #22 Disposal of Sewage/Wastewater <br />OBSERVATIONS: The floor sink for the prep sink was clogged, a plumber was working on unclogging the floor sink during <br />the inspection. Clear blockage and provide properly draining floor sink today. <br />CALCODE DESCRIPTION: All liquid waste must drain to an approved fully functioning sewage disposal system. (114197) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed uncovered baked goods on pan racks stored in customer lobby near the entrance. Store <br />uncovered ready to eat items in a location where they will be protected from contamination. Corrected on site, the pan racks <br />were relocated to behind the front counter. <br />Observed meat stored in white plastic bags in chest freezer. Store open/unpackaged food items in food grade <br />containers/bags to prevent contamination. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Provide complete label for to go items today. <br />CALCODE DESCRIPTION: Any food is misbranded if its labeling is false or misleading, if it is offered for sale under the name of another <br />food, or if it is an imitation of another food for which a definition and standard of identity has been established by regulation. Food facilities <br />with 19 or more chains in the state shall disclose nutritional information. (114087, 114089, 114089.1(a, b), 114090, 114093.1, 114094) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: Lacking chlorine test strips. Provide chlorine test strips within 1 week. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
