All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The dish machine sanitizer level at the final rinse is 0 ppm Cl (ran twice). <br />The jug of sanitizer was empty. The jug of sanitizer was replaced, the sanitizer line primed and the sanitizer level is <br />corrected to 50-100 ppm Cl. <br />Recommendation: check the machine daily (at opening) to ensure the dish machine sanitizer level is 50 ppm Cl (minimum). <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Reduce the temperature of this unit to 41F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #36 Equipment/Utensils/Linens: Proper Storage / Use <br />OBSERVATIONS: The ice scoop is being stored inside the ice of the ice machine. Store the ice scoop on the interior hook <br />or in a cleanable container in between uses.
