Per <br /> person in charge they were cooked recently. Provide 135 F or above when hot holding PHFs, once vegetables are cooked <br /> they become potentially hazardous. Corrected on site,the potatoes were reheated to 199 F and placed in a tray directly into <br /> the steam table. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Food manager certificate and food handler cards for employees were not available during the inspection. <br /> Provide certifications within 2 weeks and maintain records on site. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Provide approved <br /> thawing method such as submerged under cold running water or under refrigeration.
