<br />OBSERVATIONS: The 1 D True reach-in did not have a thermometer. Provide a thermometer within 1 week.
<br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be
<br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods
<br />and high temperature warewashing machines. (114157, 114159)

<br />OBSERVATIONS: Observed holes in floor near service windows and lifting/damaged floor under fryer and near 1 D True
<br />reach-in. Per operator they are going to have the floor replaced by the end of the month. Floors shall be constructed of
<br />approved materials and shall be impervious, smooth, easily cleanable, and provide employee safety from slipping. The
<br />floor/wall juncture shall be coved with a minimum 3/8 inch radius and the floor surface shall extend up the wall at least four
<br />inches. (Vinyl rubber top-set base is not acceptable material). Equipment shall be sealed to the floor or raised 6 inches off
<br />the floor by means of easily cleanable legs or feet. Replace flooring inside trailer within 1 month and email evidence of
<br />correction to dafonskaia@sjgov.org
<br />Observed grease build up on the floor and walls near the fryer. Observed grease build up on exterior of trailer under fryer
<br />location. Deep clean areas and maintain clean.
<br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor
<br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily
<br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original
<br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. (114143 (d),

<br />Provided SB180 to operator. Post SB180 in a location visible to customers when operating and maintain a copy of the most
<br />recent inspection report on site.
<br />CALCODE DESCRIPTION: Handwashing signs shall be posted in each toilet room, directing attention to the need to thoroughly wash
<br />hands after using the restroom (113953.5) (b) No smoking signs shall be posted in food preparation, food storage, warewashing, and
<br />utensil storage areas (113978). (c) Consumers shall be notified that clean tableware is to be used when they return to self-service areas
<br />such as salad bars and buffets. (d) Any food facility constructed before January 1, 2004, without public toilet facilities, shall prominently
<br />post a sign within the food facility in a public area stating that toilet facilities are not provided (113725.1, 114381 (e)). Proper posting of
<br />nutritional information at facilities with 20 or more chains in California (114094).
