Environmental Health Department <br />Facility Name and Address: SMOKE & MEAT BBQ, 4343 N ASHLEY LN, STOCKTON 95215 <br />Food Program Official Inspection Report <br />Routine inspection. <br />Routine inspection. <br />Probe thermometer and chlorine test strips available and are shared with the facility. <br />Per operator they have a shelf on the right side of the walk-in were they store their items and spices are stored on the bottom <br />of the spice/dry goods shelf. <br />Only sauces and spices were stored on site during the inspection. <br />Catering disposable utensils were stored in containers in back storage room and others were shared with facility. <br />Catering log was available on site. <br />Discussed report with Jeremy Staedler, Operator. <br />No signature captured. <br />Maintain a copy of this report on site when operating. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
