All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: There sanitizer dispenser at the produce 3 comp sink did not produce any sanitizer, no warewashing was <br />being done during the inspection. Manually mix sanitizing solution in 3 comp sink with at least 200 ppm quat or 100 ppm <br />chlorine when sanitizing utensils until the sanitizer dispenser is serviced and provides 200 ppm quat minimum. Corrected on <br />site, sanitizing solution will be manually mixed when warewashing until dispenser is serviced. Email evidence that sanitizer <br />dispenser produces at least 200 ppm quat minimum to dafonskaia@sjgov.org within 1 week. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br /> #22 Disposal of Sewage/Wastewater MAJOR <br />OBSERVATIONS: Per assistant manager the floor drain in the rotisserie chicken oven room is clogged. Clear blockage <br />immediately and provide proper drainage. They have already scheduled it to be serviced later today. There was no surfacing <br />sewage or any cleaning being done during the inspection. <br />CALCODE DESCRIPTION: All liquid waste must drain to an approved fully functioning sewage disposal system. (114197) <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The paper towel dispenser in the left restroom was empty, paper towel roll was on the diaper changing <br />table. Provide paper towel in dispenser today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: The discard time marked on the rotisserie chicken packages was 3 PM, per employee the chickens were <br />made at 9 AM and have a 4 hour max hold time. Keep accurate documentation when time is used as the public health <br />control and do not exceed 4 hour max hold time.
