No violations observed. No re-inspection. <br />Facility was unaware of complaint. No employees have reported any food borne <br />illnesses. Hand washing stations were observed complete. Food manager <br />certificate and food handler cards on site. Quat sanitizer available and at 200 <br />PPM. Soup is received pre-made in bags. Bags are stored inside the walk-in <br />cooler. Soup is prepared by being heated to 175 F in boiling water. Soup is then <br />moved to steam table and then served. All temperatures were at 41 F and below <br />or 135 F and above. Salad is received pre-washed and pre-cut in bags. Bags of <br />lettuce and salad toppings are stored inside walk-in cooler. Salad ingredients are <br />moved to the four drawer prep top reach-in cooler prior to assembly. All <br />temperatures were at 41 F and below. No expired food products observed. <br />Edges of some romaine lettuce in prep top cooler observed with black edges. <br />Lettuce was discarded. Per staff, lettuce is received like that. Two bags of <br />unopened lettuce was observed with black edges on minor amounts of the lettuce. <br />Food is prepared approximately 10 minutes before orders are picked up. <br />Restrooms observed in good working order, with hand washing signs, paper <br />towels, soap and warm and cold water. Gloves are worn when handling food. <br />Probe thermometer available. Sanitizer buckets set up at work stations.
