THE <br />SOUP WAS COLD. CUSTOMER BECAME ILL WITH VOMITING AND DIARRHEA LATER THAT NIGHT. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. No violations observed. No re-inspection. <br />Facility was unaware of complaint. No employees have reported any food borne illnesses. Hand washing stations were <br />observed complete. Food manager certificate and food handler cards on site. Quat sanitizer available and at 200 PPM. <br />Soup is received pre-made in bags. Bags are stored inside the walk-in cooler. Soup is prepared by being heated to 175 F in <br />boiling water. Soup is then moved to steam table and then served. All temperatures were at 41 F and below or 135 F and <br />above. Salad is received pre-washed and pre-cut in bags. Bags of lettuce and salad toppings are stored inside walk-in <br />cooler. Salad ingredients are moved to the four drawer prep top reach-in cooler prior to assembly. All temperatures were at <br />41 F and below. No expired food products observed. Edges of some romaine lettuce in prep top cooler observed with black <br />edges. Lettuce was discarded. Per staff, lettuce is received like that.Two bags of unopened lettuce was observed with black <br />edges on minor amounts of the lettuce. Food is prepared approximately 10 minutes before orders are picked up. Restrooms <br />observed in good working order, with hand washing signs, paper towels, soap and warm and cold water. Gloves are worn <br />when handling food. Probe thermometer available. Sanitizer buckets set up at work stations.
