SAN JOAQUIN <br />COUNTY <br />Environmental Health Department <br />Time In 2:40 pm <br />Time Out: 3:00 pm <br />COMPLAINT INSPECTION REPORT <br />Name of Facility: IN-N-OUT BURGER Date: 12/13/2022 <br />Address: 5202 PACIFIC AVE, STOCKTON 95207 <br />Owner/Operator: IN-N-OUT BURGER Telephone: (949) 509-6315 <br />Program Element: 1600- FOOD PROGRAM Complaint #: C00055429 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />ON 12-12-22 AROUND 6:00PM, A CUSTOMER ATE A DOUBLE CHEESEBURGER, FRIES WITH SPREAD PACKET, <br />AND PINK LEMONADE. BEGAN FEELING VERY NAUSEATED AROUND 8:00PM. COMPLAINANT HAS HAD MANY <br />VOMITING EPISODES BEGINNING AT 10:00PM AND IT HAS NOT SUBSIDED. NO PHYSICIAN SEEN. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION -- TEMP ° F -- COMMENTS <br />Two drawer, one door cooler -- Drive thru -- 37.00° F <br />Two door prep cooler-- Right-cook's line -- 41.00° F <br />Hand sink-- Next to prep sink-- 101.00° F <br />Two door prep cooler -- Center-cook's line -- 41.00° F <br />Hand sink -- Women's restroom 106.00° F <br />Hand sink-- Drive thru -- 101.00° F <br />Prep sink-- 120.00° F <br />Mop sink-- 121.00° F <br />Two door prep cooler -- Left-cook's line -- 38.00° F <br />Walk-in cooler -- 39.00° F <br />Three door Trualsen cooler -- Meat patties -- 38.00° F <br />COMMENTS AND OBSERVATIONS <br />Complaint inspection. No major violations. No re-inspection. <br />Restaurant was unaware of complaint. No employees have reported being sick. Food manager certification and food handler <br />cards reviewed during the inspection. Probe thermometer available. Hand washing stations complete and quat sanitizer <br />available at 300 ppm. Beef patties are received and stored inside the three door Trualsen cooler, then moved to one of three <br />prep top coolers at the cook's line, cooked and served to the customer. Cooler temperatures at 41 F or below. Cooking <br />utensils are changed out every four hours. Burger toppings are stored inside the walk-in cooler and moved the the prep top <br />coolers at the cook's line prior to assembly. Temperatures of coolers at 41 F or below. Tomatoes, onions, lettuce and <br />potatoes are received whole and are cleaned and cut on site. Potatoes for french fries are peeled and stored inside walk-in <br />cooler prior to being cut and fried and served to the customer. Spreadpackets are stored inside walk-in cooler and then <br />moved to the two drawer, one door cooler at the drive thru. Temperatures were at 41 F and below. Pink lemonade <br />concentrate is received in bags and is stored in the walk-in cooler. Pink lemonade concentrate is mixed with water and then <br />put in dispensers for serving to customers. Whole lemons were observed in walk-in cooler. Whole lemons are not used in <br />the lemonade and are chopped for customers to use at self service. Gloves are used when handling food. No violations <br />observed during complaint inspection. <br />Discussed inspection report with Warfred (Manager).
