Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The meatballs at the steam table were 116-125 F, per employee they were placed there at 10 AM.The <br /> water at the steam table was 189 F. Provide 135 F or above when hot holding. Corrected on site, the meatballs were <br /> reheated and they were 186 F. <br /> The meats at the front counter were 44-49 F. Provide 41 F or below when cold holding. Correct immediately. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Email food <br /> manager certificate and food handler cards to dafonskaia@sjgov.org within 1 week and maintain records on site. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Provide paper towels in dispenser <br /> today. <br /> The front hand sink was clogged and not draining.
