All proposed equipment is subject to EHD <br /> approval [CRFC§114130]. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair. Every hood shall be installed to provide thorough cleaning of all interior and exterior surfaces, including, <br /> but not limited to,the hood,filters, piping, lights,troughs, hangers,flanges, and exhaust ducts. Mechanical exhaust <br /> ventilation equipment shall be provided over all the cooking equipment as required to effectively remove cooking odors, <br /> smoke, steam, grease, heat and vapors. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft, or a <br /> light-switch activated exhaust fan,consistent with local building codes. When otherwise installed,they shall be mounted or enclosed so as to facilitate cleaning (e.g., at least <br /> one-half('/z)inch from the wall and six(6)inches above the floor)[CRFC§114271]. <br /> CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device,as required <br /> by applicable plumbing codes.
