(114115 (c)) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: The dishwasher is currently not sanitizing a minimum chlorine concentration of 50 Parts Per Million <br />(PPM). Dish washer hose was drawing chlorine bleach from a plastic gatorade bottle. Discontinue practice. Manually wash, <br />rinse, and sanitize dishes and utensils with 100 PPM chlorine for 30 seconds. Facility may resume use of dishwasher once <br />dish washing sanitizer container has been obtained and installed according to manufacturer directions and is sanitizing at 50 <br />PPM. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
