All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: Observed the dishwasher is currently not sanitizing at a minimum chlorine concentration of 50 Parts Per <br />Million (PPM). Repair/replace dishwasher so that it is sanitizing at a minimum chlorine concentration of 50 PPM. <br />Discontinue use until it has been repaired. Manually sanitize dishes and utensils with 100 PPM chlorine or 200 PPM quat for <br />proper sanitation. (MAJOR) <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: Paper towels were lacking at the bar hand sink. Ensure paper towel dispensers are stocked and in good <br />working order at all times. Correct today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #36 Equipment/Utensils/Linens: Proper Storage / Use <br />OBSERVATIONS: The ice scoop was observed inside the ice compartment of the ice machine and also in the ice holder at <br />the bar with the handle touching the ice during the inspection. Remove ice scoop, wash and sanitize, and store inside a <br />cleanable container with handle facing up or store in ice with handle facing up. Correct today. <br />Observed two CO2 cylinders that were not secured. Store CO2 cylinders upright against a wall and secured with a chain. <br />Correct today. <br />Observed a bowl inside a container that was being used as a scoop. Obtain a scoop and store outside the container in a <br />cleanable container when not in use or with scoop handle stored out of food item. Correct today. <br />CALCODE DESCRIPTION: All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from <br />food and food-contact surfaces. (114185.3 - 114185.4) Utensils and equipment shall be handled and stored so as to be protected from <br />contamination.
