Store non raw meat items above or on <br /> separate shelves from raw meat items to prevent contamination. Corrected on site. <br /> Observed bowl stored directly on top of salad in Ascent prep top and bags stored directly on top of vegetables in 3 D True <br /> reach-in. Cover food items prior to storing items on top to prevent contamination. Bowl was removed from prep top. Correct <br /> immediately. <br /> The 3 comp sink is used for food prep and warewashing. There was chicken on the drainboard that was going to be <br /> prepped and some utensils in the middle compartment. When 3 comp sink is used for both warewashing and food prep then <br /> only one task/process may be done at a time to prevent contamination. The 3 comp sink must be cleaned before and after <br /> food prep. <br /> Observed uncovered food items in in coolers. Cover food items when stored to prevent contamination. Email evidence of <br /> correction to dafonskaia@sjgov.org within 1 week. <br /> Observed meat stored in white plastic bags in Frigidaire freezer. Store unpackaged food items food grade containers/bags. <br /> Correct today. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination. Provide thermometer. Corrected on site. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines.
