Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed a blue plastic bag of chicken in the prep sink thawing. Thaw food items under refrigeration, <br />completely submerged under cold running water, in the microwave oven or during the cooking process. Store food in closed containers with <br />tight fitting lids. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The following was observed: <br />-Mop sink was observed with black build-up in sink and surrounding walls <br />-Grey plastic pallets/racks holding cooking oil boxes were observed with heavy build-up. <br />-Curtain between the front kitchen and back prep/ware washing area was observed with stains and build-up. <br />-Table with blenders and table with tea brewers observed with heavy build-up <br />Clean above items within three days.
