Provide bucket with sanitizing solution and wiping cloth when food prep is taking place. Ensure the solution <br />has a concentration of either: chlorine 100 - 200 Parts Per Million (PPM), or quaternary ammonia (quats) 200 - 400 Parts <br />Per Million (PPM) for proper sanitation of all food preparation and contact surfaces. Correct today. <br />-------------------------------------------------- <br />The quats sanitizing test strips at the bakery department were observed to be discolored. Obtain new sanitizing test strips <br />for proper sanitation of all food contact surfaces and kitchenware. The fly crawled out of the water within a few <br />minutes. Remove all water, rinse tripe, discard any contaminated portions, and replace with clean water. Corrected on site. <br />----------------------------------------------------- <br />Observed two small insects crawling on the floor underneath the sweet bread display cabinet. Remove insects as soon as <br />possible. Discard any contaminated food items. Clean and sanitize area. Correct today. <br />Per manager, facility is serviced by Western Exterminator Company twice per week. Correct today. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process.
