Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:The following was observed: <br /> -Hot water at the deli prep sink was observed at 109 F. <br /> -Hot water at the deli three compartment sink was observed at 110 F. <br /> -Hot water at the produce prep sink was observed at 109 F. <br /> -Warm water at the produce hand sink was observed at 91 F. <br /> Adjust hot water heater so that hot was is provided at a minimum of 120 F and warm water at a minimum of 100 F. Correct <br /> today. <br /> CALCODE DESCRIPTION:An adequate,protected,pressurized,potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:FRP panel near deli three compartment sink is not secured to the wall. Re-secure FRP panel within one <br /> week. <br /> Floors under hood behind cooking equipment in the deli observed with heavy black debris and grease. Clean floors within <br /> one week. Maintain clean. <br /> Wall/base damage was observed in the meat department under the three compartment sink and on the adjacent wall. <br /> Repair wall/base so that it is smooth, cleanable and non-absorbent within 30 days. <br /> CALCODE DESCRIPTION: The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
