All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Several employees have not completed the 2023 annual food safety internal training. Have employees <br />complete internal annual food safety training within 2 weeks. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Time is used as the public health control at the prep table. The times marked on the back up side of the <br />prep table were 3 PM for the tomatoes, cheese and etc which have a 4 hr hold time and 7 PM for the bacon and guacamole <br />which have a 8 hr hold time. The items were placed there at 10 AM, employee stated that since they have a window of 10-11 <br />AM to finish prepping they put the time from 11 AM. Maintain accurate records of when items are placed at prep table. <br />Correct today. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: Observed leaking from prep sink faucet head. Repair within 1 week. <br />Observed ice build up on fan and compressor pipe in walk-in cooler and on fan, compressor pipes, and wall in walk-in <br />freezer. Clean within 1 week and repair as necessary. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards.
