All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The sanitizer spray bottle had about 100 ppm quat and the sanitizer dispenser was provided 100 ppm <br />quat. Manually mix sanitizing solution to provide 200 ppm quat minimum until dispenser is serviced and provides at least <br />200 ppm quat. Corrected on site, sanitizer bucket solution was manually mixed and it was 300 ppm quat. Email evidence of <br />sanitizer dispenser at 3 comp sink working properly to dafonskaia@sjgov.org within 1 week. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Per Regina the <br />cup was used to chage the water after unit was cleaned and it was left there. Discard cup today and clean area, follow <br />manufacturer's instruction for cleaning unit. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair.
