All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: 3 comp sink/ hand sink, in the newly installed small hall bar, has temporary soap bottle to wash hands <br />and is lacking of paper towels. Provide paper towels today and provide soap and paper towels from dispensers mounted to <br />the wall in 2 weeks. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: 3 ice scoops are stored on top of the ice maker in the main kitchen. Wash, sanitize scoops and store <br />them in clean bins when not in use. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Provide proper labels to food containers in 1 week. <br />I observe wrapped raw fish rack stored on top of wrapped cooked food rack in the walk in cooler. Store raw food on bottom <br />shelves and cooked food on top shelves to avoid potential contamination. Correct today. Corrected on site. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: Facility is using wrong strips to check the chlorine concentration in the dish washer. Provide chlorine <br />strips in 3 days. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
