Provide hot water at 120 F minimum for the 3-compartment sink prior to <br />re-inspection. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: The 3-comprtment sink was lacking drainboards on either side. Mobile Food Facilities where <br />nonprepackaged food is cooked, blended, or otherwise prepared shall provide a warewashing sink with at least three <br />compartments with two integral metal drainboards. The dimensions of each compartment should be large enough to <br />accommodate the cleaning of the largest utensil. Each drainboard shall be at least the size of one of the sink compartments. <br />Correct prior to re-inspection. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method. All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Enclose with solid material such as <br />plexiglass and provide passthrough window service openings no more than 216 square inches and no less than 18 inches <br />apart. Correct prior to re-inspection. Shall be covered with solid material or screen. If screen is used it must be at least <br />16-mesh per inch. <br />CALCODE DESCRIPTION: The premises of each food facility shall be kept clean and free of litter and rubbish all clean and soiled linen <br />shall be properly stored non-food items shall be stored and displayed separate from food and food-contact surfaces the facility shall be <br />kept vermin proof.
