Ensure steam <br /> table maintains 135 F or higher prior to use to ensure proper hot holding temperatures. Provide and <br /> maintain hot water at 120 F for 3-compartment sink and 100 F for hand washing sink. One person is required to have a food <br /> manager certification.All other employees who handle food are required to obtain the 3-year Food Handler Certification <br /> within 30 days from date of hire.
