All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #8 Use of Time as a Public Health Control MAJOR <br />OBSERVATIONS: Facility is using 4 hours time control for the sliced tomatoes, lettuce and cheese. They post sticker with <br />the time the food is held for 4 hours so that the remaining of the food will be discarded after. Food items are still held, at the <br />time of inspection, exceeding the 4 hours time control and employees are still using the food to prepare sandwiches. Stop <br />this practice immediately. Start to strictly apply the 4 hours time control for all potentially hazardous food. Correct now. <br />All remaining food held for more than 4 hours are voluntarily discarded by the person in charge. New batches pulled from <br />the walk in cooler and 4 hours time log stickers posted. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: 1 D Silver King cooler at front counter, has temp at 46F.
