<br />OBSERVATIONS: Observed wiping cloths stored on prep counter, a bucket was set up but it had less than 100 ppm
<br />chlorine. Provide 100 ppm chlorine minimum sanitizer bucket and sanitize wiping cloth in bucket between uses. Corrected
<br />on site.

<br />OBSERVATIONS: The water at the bakery hand sink was shut off, per person in charge this was due to the handles not
<br />working. Repair and provide hot and cold water at this hand sink within hot water at 100 F minimum. Correct today.

<br />OBSERVATIONS: Observed raw meat stored above produce in walk-in cooler. Store raw meat items under or completely
<br />separate from non raw meat foods to prevent contamination. Corrected on site.
<br />Observed tamales stored in plastic bags and some of the bags had holes in them and one had a sauce/liquid stilled on the
<br />bag. Store tamales in a package/container where they are fully covered and protected from contamination.
<br />Observed uncovered container in 3 D Atosa reach-in. Cover food items when stored to prevent contamination.
