(113953, 113953.1, 114067(0) <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:The condiment 2 D reach-in w/prep top was 45 F.The jars said "Keep refrigerated after opening." <br /> Maintain 41 F or below when cold holding PHFs. Correct today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #8 Use of Time as a Public Health Control <br /> OBSERVATIONS:Per person in charge their internal policy is to have a 3 hour max hold time for the foods in the hot case <br /> (corn dogs, hog dogs, sandwiches). Observed corn dogs with discard time of 4:00 PM at 12:45 PM during complaint <br /> inspection. Per person in charge they were made around noon and the wrong time was written down. Follow internal policy <br /> and do not exceed max hold time. <br /> CALCODE DESCRIPTION:When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:Hot water was shut off at customer restroom hand sink.
