Environmental Health Department <br />Facility Name and Address: LAS ROSAS DEL CANJE, 1108 E WATERLOO RD, STOCKTON 95205 <br />Food Program Official Inspection Report <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed meat in the middle compartment of the 3-comp sink simultaneously with unclean dishes to be <br />warewashed. Facility is lacking a prep sink for the washing of food items and is using the 3-compartment warewash sink to <br />wash food items. Discontinue practice. If 3-comp sink is used for rinsing/thawing food items, wash and sanitize the 3-comp <br />sink before and after using sink as prep sink. Correct today. <br />--------------------------------------------------------------------------------------------------------------------- <br />Repeat: Observed open food items inside the freezer and prep cooler. Provide tight-fitting lids, foil, or plastic coverings over <br />food items to protect from contamination.
