COMPLAINANT ATE SPICY GARLIC <br />BONELESS CHICKEN WINGS WITH RANCH. COMPLAINANT EXPERIENCED SYMPTOMS OF FEVER, VOMITING <br />AND CHILLS AT 4:00AM 6/09/2023. SYMPTOMS LASTED UNTIL 9:00AM. COMPLAINANT HAD A VIDEO CALL <br />APPOINTMENT WITH DOCTOR." <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Per GM, no similar complaints have been received. Per <br />GM, staff members have been well (no similar symptoms). Per GM, the facility has a health policy, no employee may report to <br />work until they are symptom free (diarrhea, vomiting, fever) for 24 hours. <br />Per GM, the boneless wings are received frozen twice a week (stock is rotated: first in/first out). The boneless wings are <br />pre-cooked. They are fried at the fryer for 6 minutes. The two largest pieces are temped with a thermometer to an internal <br />temperature of at least 165F. Frozen boneless chunks on site this date have a best by date of April 2024. <br />Per GM, the ranch is not made in house. It is processed (arrives pre-made). Once opened, the ranch is stored at the cold well <br />dispenser (for dine in). Ranch for to-go orders are portioned into ramekins and stored at the 1 door Traulsen prep. <br />Per GM, the spicy garlic sauce is not made in house.
