All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The walk-in cooler was observed at temperatures between 49 F - 52 F. Immediately transfer the food <br />items to a cooler where they can be maintained at 41 F or below. Discard food items above 50 F held longer than four hours <br />in this cooler. Discontinue use of this cooler until it is repaired to maintain 41 F or below. Correct immediately. <br />------------------------------------------------------------- <br />The walk-in freezer was observed at temperatures between 32 F - 37 F with some food items partially thawing. Transfer <br />thawed food items to a 41 F cooler and process as soon as possible. Transfer frozen food items to a freezer at 10 F or <br />below immediately. Repair freezer prior to resuming use. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br />OBSERVATIONS: The hand sink at the kitchen entrance has low pressure at the hot water faucet. Hot water was lacking at <br />this hand sink at the time of inspection. Repair and provide hot water at 100 F minimum. Correct today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Food handler certificates are lacking. One person is required to have a food manager certification. All <br />other employees who handle food are required to obtain the 3-year Food Handler Certification within 30 days from date of <br />hire. Obtain or renew food handler certificates and store copies on site. Correct within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination.
