Environmental Health Department <br />Facility Name and Address: LA PLACITA TAQUERIA, 222 N EL DORADO ST, STOCKTON 95202 <br />Food Program Official Inspection Report <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The hand sink at the kitchen entrance is lacking paper towels and hand soap. Employees are using the <br />hand sink on opposite end adjacent to the 3-compartment sink. Provide paper towels and hand soap to ensure employees <br />are washing their hands as needed. Correct within three days. <br />-------------------------------------------------------- <br />The soap dispenser inside the men's restroom is empty. Refill today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed fish thawing in a container of water. Thaw food items under refrigeration, completely <br />submerged under cold running water, or in the microwave oven during the cooking process. Correct today. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed open pitchers of aguas frescas inside the 2-door cooler at the front service area. Place <br />coverings such as lids, foil, or plastic wrap over the pitchers to protect against contamination. Correct today. <br />-------------------------------------------------------- <br />A plastic container without a handle was observed inside the dry food storage container. Use a scoop with a handle and <br />store with handle facing upward and not inside the product to protect against food contamination. Correct today. <br />-------------------------------------------------------- <br />Observed food items on the 3-compartment sink's drain board less than 24 inches from hand sink in the kitchen. The hand <br />sink and 3-compartment sink were not separated by a splashguard. Provide a splashguard six inches in height from front <br />edge to back edge to avoid food contamination. Correct within 30 days. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: Observed chicken and fish being washed in the 3-compartment sink. Facility is lacking a prep sink. Since <br />the 3-comp is being used as a prep sink and for warewashing, ensure the sink is being sanitized before and after each use. <br />Correct today. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
