All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Food handler certificates were lacking for employees. All employees who are handling food should <br />obtain 3-year Food Handler Certification within 30 days from date of hire. Provide copies of the certificates within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #4 Employee Eating, Tasting, Drinking or Tobacco Use <br />OBSERVATIONS: Observed employee had personal food on top of 1 door Atosa cooler. Employees shall not eat, drink, or <br />smoke in any food prep/service area. Discontinue practice immediately. Correct today. <br />CALCODE DESCRIPTION: No employees shall eat, drink, or smoke in any work area. (113977) <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: Hand soap and paper towel dispensers are lacking in hand wash. Provide hand soap inside pump-style <br />or wall mounted dispenser and a fully stocked wall-mounted paper towel dispenser for proper hand washing. Correct today. <br />Hand soap inside pump-style container provided. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: A sanitizing solution bucket with wiping clothes was not set up at the facility. Provide bucket with <br />sanitizing solution and wiping cloth when food prep is taking place. Ensure the solution has a concentration of either: <br />chlorine 100 - 200 Parts Per Million (PPM), or quaternary ammonia (quats) 200 - 400 Parts Per Million (PPM) for proper <br />sanitation of all food preparation and contact surfaces. Correct today. Corrected on site. Employee provided sanitizing <br />bucket with chlorine 100 ppm. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
