COMPLAINANT STATES SHE IS STILL FEELING SYMPTOMS, FATHER'S SYMPTOMS HAVE <br /> LESSENED TO JUST CRAMPING. NO DOCTOR SEEN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:3 of 7 food handler cards are expired. Renew cards within 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. No reported illness by employees. No employees working for other food <br /> facilities, day care or health care facilities. Staff consuming food eaten by complainant. No out of the country traveling by <br /> employees. <br /> Biscuits are received from approved source( Restaurant Depot)and stored in the 2 back freezer units. Frozen biscuits pulled <br /> from freezer to the walk in cooler(41 F)to be defrosted and served. Gravy is received as prepackaged powder packs.Water is <br /> added to the powder to prepare the gravy. Sausage(raw)rolls, purchased from approved source, stored in the freezer units, <br /> pulled in the walk in cooler to be defrosted before cooking it. Sausage ground meat is cooked on the griddle to be added to <br /> the prepared gravy and to be held on the hot hold unit( 187F). Gravy(White at 139F/Brown 148F).Hand sink at the cooking <br /> area, is accessible, has hot water 100F and fully supplied with soap and paper towels. Sanitizer buckets are set up with <br /> chlorine 200ppm. Dish washer has chlorine 50 ppm. Ware wash sink and prep sink have hot water at 120F or more. Chlorine <br /> strips are available on site. Rest rooms are available and operational.All food manager certificates are valid and on site.
