Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:A food manager's certificate was not available during the inspection. Provide a copy of a valid 5-year <br /> food manager's certificate to (baker@sjgov.org within 60 days of permit issuance. <br /> All other employees should obtain 3-year Food Handler Card within 30 days from date of hire. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947)Food facilities that prepare,handle or serve non-prepackaged potentially hazardous food,shall have an <br /> employee who has passed an approved food safety certification examination. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #39 Thermometers Provided/Accurate/Easily Visible <br /> OBSERVATIONS:A probe thermometer was lacking. Provide a probe thermometer prior to operation. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines. (114157, 114159) <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:Absorbent areas of the wall were observed below the food pass through window. Repair/paint wall so <br /> that it is smooth, cleanable, and non absorbent. Correct prior to operation. <br /> One tile at the top of the mop sink wall was lacking. Replace tile so that wall is smooth cleanable and non absorbent, correct <br /> prior to operation. <br /> Cove based tiles were lacking along the wall with the ice machine and part of the wall with the hood. Floor tiles were lacking <br /> near the walk-in cooler. The floor surfaces in all food preparation or packaging areas, open food storage areas, utensil <br /> washing areas, refuse storage areas, janitorial areas, and all restroom and employee change areas, shall be smooth and of <br /> durable construction and nonabsorbent material which is easily cleaned. These floor surfaces shall be coved at the juncture <br /> at the floor and wall with a three-eighths(3/8) inch minimum radius coving and shall extend up the wall at least four(4) <br /> inches. Rubber or vinyl top set base is not permitted in these areas. Correct prior to operation. <br /> CALCODE DESCRIPTION: The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
