All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: One person shall obtain the year Food Safety Certificate (also called the Food Manager) within 60 days. <br />Once obtained, provide a copy to Kadeanne Linhares by e-mail or text (klinhares@sjgov.org / 209-616-3025). <br />One employee on site this date lacks the 3 year Food Handler Card. Obtain the 3 year Food Handler Card by 30 days. <br />Maintain a copy on site and accessible. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The hot water temperature at the 3-comp warewash sink and the 1 comp food prep sink is 115F. <br />Increase the hot water temperature to 120F (minimum). Correct today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #29 Toxic Substances Properly Identified/Stored/Used <br />OBSERVATIONS: Observed a can of Hot Shot, a can of Raid, and a jug of Ortho Home Defense. Remove household <br />insecticides from the facility today. Use commercial grade/food safe insecticides only. <br />CALCODE DESCRIPTION: All poisonous substances, detergents, bleaches, and cleaning compounds shall be stored separate from food, <br />utensils, packing material and food-contact surfaces. (114254, 114254.1, 114254.2) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The walls have new shelving. The new shelf braces are unfinished / raw wood. Paint / treat the wood <br />with a semi-gloss waterproof paint so the surface is smooth, cleanable, and nonabsorbent. Correct by 2 weeks. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
