(114115 (c)) <br /> #36 Equipment/Utensils/Linens: Proper Storage / Use <br />OBSERVATIONS: Observed the ice scoop stored on top of a shelf. Clean and sanitize the ice scoop and store in a <br />cleanable container when not in use. Correct today. <br />CALCODE DESCRIPTION: All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from <br />food and food-contact surfaces. (114185.3 - 114185.4) Utensils and equipment shall be handled and stored so as to be protected from <br />contamination. Used wiping cloths may contain <br />unhealthy levels of bacteria and can potentially cross-contaminate food items when placed on food contact surfaces. <br />Discontinue practice today. Store wiping cloths that are still in use inside a bucket containing sanitizing solution at 100 - 200 <br />PPM chlorine or 200 - 400 PPM quat. Place unclean wiping cloths that are no longer in use inside the dirty linen bag away <br />from food prep, contact, and storage areas. Correct today. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
