The paper towel dispenser at the men's restroom is empty. Refill soap and paper towel <br />dispensers today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: [REPEAT] A sanitizing solution bucket with wiping cloth was not set up at the bakery department <br />Provide a bucket with sanitizing solution and wiping cloth for proper sanitation of all food preparation and contact surfaces. <br />Ensure the solution has a concentration of chlorine 100 - 200 Parts Per Million (PPM) or or quaternary ammonia (quats) 200 <br />- 400 Parts Per Million (PPM) for proper sanitation of all food contact surfaces and kitchenware. Correct today. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Place coverings such as lids, foil, <br />or plastic wrap over the food items to protect from contamination. Correct today. <br />----------------------------------------------------------------------------- <br />The splashguard between the sweet bread rack and hand sink in the bakery was less than six inches in height. Provide a <br />splashguard six inches in height from front edge to back edge to avoid food contamination. Correct within 30 days. <br />----------------------------------------------------------------------------- <br />Observed the dry ingredient containers above the 2-dr prep cooler in the hot food department were lacking lids. Provide lids <br />to protect against contamination. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Store food <br />items in labeled containers once the original packaging is opened. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
