Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Observed taquitos in front counter hold hot at 110 F. Food items shall be 135 F minimum when hot <br />holding. Any food items held under 135 F shall not exceed the 4 - hour maximum hold time and shall have written <br />documentation for hold times. Food items held longer that the 4 - hour hold time shall be discarded. Remove contaminated ice. Clean and sanitize ice <br />machine. Remove personal food items and store away from food sold to the public. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
