All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed cardboard, foil and cleaning cloths being used as liners on shelves throughout the kitchen. <br />Observed cardboard screwed to wall behind shelves in waitress station area. Remove cardboard, foil and cloth liners as <br />they are not cleanable surfaces to protect food prep and storage areas from contamination. Correct today. (REPEAT) <br />Dry storage scoops and can opener were observed with food debris build-up. Clean and sanitize scoops and can opener <br />today. <br />Observed black build-up on the deflector plate of the ice machine. Clean and sanitize to protect food from contamination. <br />Correct today. <br />Rice scoops were observed stored in room temperature water. Store rice scoops in ice water to prevent the growth of <br />bacteria. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. Label <br />food containers with their common name after they have been removed from the original packaging. Correct today. <br />(REPEAT) <br />Open bags of food observed in dry storage room. Once bags are opened, store inside cleanable containers with tight fitting <br />lids and labels. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
