SAN J O A Q U I Environmental Health Department <br /> Food Program Official Inspection Report <br /> Facility Name and Address: Michael's New York Style Pizza, Inc, 2300 W Alpine Ave, STOCKTON 95204 <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Thermolabels were not available at the facility for the heat sanitizing dishwasher at the bar. Obtain <br /> thermolabels to ensure 160 F is reached for proper sanitation in the dishwasher. Correct in 7 days. (REPEAT) <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method. (I14067(f,g), 114099, 114099.3, 114099.5, 114101(a), <br /> 114101.1, 114101.2, 114103, 114107, 114125) <br /> #35 Equipment/Utensils Approved and in Good Repair <br /> OBSERVATIONS:The table holding the griddle in Gina's cafe is in disrepair and lopsided. Repair/replace table so that it is <br /> in good working order within two weeks. <br /> The pallet holding flour bags in the back room of Gina's Cafe was observed with heavy food debris. Clean and sanitize <br /> pallet today. Maintain clean. <br /> Ledges around the bottoms of both pizza warmers observed with heavy food debris. Clean and sanitize today. Maintain <br /> clean. (REPEAT) <br /> Both pizza warmers were observed with detached gaskets. Repair gaskets so that warmers are in good working order <br /> within one week. (REPEAT) <br /> Shelves inside the large walk-in were observed with heavy dust accumulation and food debris. Detail clean and sanitize <br /> shelves with one week. Maintain clean. <br /> Liquid and a wet cloth were observed in the bottom of the one door Pepsi cooler. Clean up liquid, remove cloth and repair <br /> any leaks if necessary. Correct today. <br /> Two cabinets in the pizza prep area were observed missing their laminate covering making the cabinet absorbent in areas. <br /> Repair/paint cabinets so that they are smooth, cleanable and non-absorbent within 30 days. <br /> The shelves with the pizza trays was observed dusty. Clean and sanitize shelves today. Maintain clean. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair.
