All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The following units for cold storage of Potentially Hazardous Foods (PHFs) were observed over the <br />required temperature of 41 F: <br />- Walk-in cooler was observed at 43 F <br />- True 1-dr prep cooler was observed at 49 F <br />Adjust/repair units to maintain all PHFs at 41 F or below. PHFs held less than four hours and under 50 F need to be <br />transferred to a cooler at 41 F immediately. Discard PHFs if 50 F or higher. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #25 Employee Cleanliness and Hair Restraints <br />OBSERVATIONS: Observed a Reebok jacket that was hung beside the ice machine and made contact with the interior side <br />of the ice machine door when opened. Discontinue practice. Store personal items away from food prep, food storage, and <br />food service areas at an assigned location. Correct today. <br />CALCODE DESCRIPTION: All employees preparing, serving or handling food or utensils shall wear clean, washable outer garments or <br />uniforms and shall wear a hairnet, cap, or other suitable covering to confine hair. (113969, 113971) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed a cardboard being used as a liner on a shelf in the dry storage room located next to the bakery <br />prep room. Remove cardboard as it is not a cleanable surface. Correct today. <br />-------------------------------------- <br />The hand sink at the meat dept is located beside meat processing table and is less than 24 inches in distance. Provide a <br />splashguard six inches in height from front edge to back edge to protect against contamination.
