The business name shall be in letters at least 3 inches high. <br />Letters and numbers for the city, state, ZIP Code, and permitholder name, if different from the <br />business name, shall not be less than one inch high. This must be printed on both side of the mobile <br />food facility. <br />The service windows shall be equipped with a self-closing device. Screen shall be at least 16 mesh <br />per square inch. <br />All drinking water/safe water tubing must meet the NSF standard 61. Prior to installation, provide <br />manufacturer's specification sheet. <br />All vents shall have 16 mesh per square inch. <br />6 <br /> All wall shelving shall have a barrier (lip) to prevent items from falling. <br />7 All equipment shall be secured to prevent displacement. <br />All equipment and counters/cabinets shall be installed on 6-inch high round metal legs, commercial <br />castor, or completely sealed in place on a 4-inch high curb or pedestal. The curb or pedestal shall <br />have integral cove base with 3/8-inch radius continuous with the floor. <br />Cove base shall be flush, integral, and continuous with the floor surface with a minimum 4-inch <br />high with 3/8-inch radius. Top set tile or rubber base is not approved. <br />Ensure all piping and conduits of all types are concealed within walls, floors, and ceilings. <br />Prior to scheduling an inspection with the Department of Environmental Health, all MFFs must <br />obtain an insignia of approval from The State of California Department of Housing and Community <br />Development (HCD).
