All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: I observe cooked rice, stored in food container, with temp of 148F. Container is held at room temp. As per <br />operator, cooked rice will be kept at the cook line to be used to prepare upcoming orders. Hot food is required to be held at <br />135F or more at all times. Hold hot food on hot hold unit to keep temp at 135F or above. Correct today. Corrected on site. <br />*** Operator held the cooked rice in the rice cooker to keep it at 135F or more during operating hours.**** <br />Walk in cooler has temp at 43F. Provide 41F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />This is (Minor - Food) Violation. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: I observe unnecessary items, dirty knives and rice cooker, are stored on clean utensils drain boards of the <br />dish washer station. Drain board has build up. Remove unnecessary items. Move dirty utensils to be properly washed. Relocate <br />the rice cooker in different station to avoid any potential contamination of the food . Sanitize the drain board. Correct today. <br />Corrected on site. <br />I observe an employee mincing raw chicken at the clean utensils drain board of dish washer machine. Stop this practice <br />immediately. Relocate the grinder machine to be away from the clean utensils air dry drain board of dish washer to avoid any <br />potential contamination of the clean utensils. Correct now. Corrected on site. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br />This is (Minor - Food) Violation. <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: 3 comp sink, prep sink and mop sink have temp at 116F.
